-2 Salted cod fillets unsalted
-3/4 cup oil
-4 Onions chopped
-4 Cloves of garlic, crushed
-2 Tsp. tablespoons of tomato paste
-1 Spill cinnamon
-1 bay leaf
-300 gr. ‘‘Prunes Despina’’
-700 gr. potatoes coarsely
– Salt, pepper
Directions
Saute onions, garlic and tomato paste in a large pan with the oil for 5 minutes. Add cinnamon, bay leaf and potatoes and stir for a few minutes. Pour 2 cups hot water and simmer for 20 minutes, until potatoes are just tender. Add the plums and haddock cut into large pieces. Add salt and pepper and cook for 10 minutes or until you are left with the sauce.
